A nourishing breakfast that's delicious, quick and easy to make. Lovely with yoghurt and fresh fruit, or sprinkled on porridge for added crunch and spice.

Ingredients
150g oats
40g chopped walnuts or almonds
2 tsp ground cinnamon
¼ tsp ground ginger (optional)
1 apple, peeled and grated
3 tbsp honey
Pinch of salt
2 tbsp raisins or chopped dried apple
1 tbsp sunflower or pumpkin seeds
Method
Preheat your oven to 160°C (fan) and line a baking tray with parchment paper.
In a large bowl, mix together the oats, chopped nuts, cinnamon, ginger, salt, raisins, and seeds.
Add the grated apple and honey, stirring thoroughly until everything is well combined and coated.
Tip the mixture onto the lined tray and press it down firmly with the back of a spoon to form a compact, even layer — as if making a large granola bar.
Bake for 25–30 minutes, keeping an eye towards the end to avoid over-browning.
Remove from the oven and allow to cool completely on the tray — it will firm up as it cools.
Once cool, break into clusters or crumble to your preferred granola texture.
Store in an airtight container for up to 10 days, or freeze in portions for up to 2 months.
