Crumbled Mushroom Salad Topper

A smoky, savoury, plant-based topping that adds rich flavour and texture to any salad bowl.

Ingredients

  • 250g chestnut mushrooms, crumbled by hand

  • 1 tsp ground cumin

  • 1 tsp smoked paprika

  • 1 tsp fresh coriander, chopped (plus 1 tsp more for garnish)

  • A splash of water (for cooking)

Method

  • Crumble the mushrooms by hand.

  • Heat a non-stick frying pan over medium heat.

  • Add the mushrooms, cumin, smoked paprika, and 1 tsp chopped coriander.

  • Add a splash of water to prevent sticking and stir-fry for about 8–10 minutes, or until the mushrooms are browned and slightly crispy in parts. Add more water if needed to prevent drying out.

  • Remove from heat and serve warm on top of your favourite salad mix.

  • Garnish with the remaining fresh coriander just before serving.
