  • 150 ml chicken stock

  • 2cm fresh ginger, grated

  • 3 garlic cloves, crushed

  • ½ tsp turmeric

  • ½ tsp chilli powder

  • 1 tsp garam masala

  • 2 tsp curry powder (mild, medium or hot to taste)

Method

  • Heat the oil in a large pan over high heat.

  • Add the cumin and fennel seeds and let them crackle and pop.

  • Add one chopped onion and reduce the heat to medium.

  • While onions cook, mix garlic, ginger, chilli powder, curry powder, and turmeric with a splash of water to form a paste.

  • Once onions are golden, add the paste and cook for 2 minutes.

  • Stir in the chicken and cook until no longer pink.

  • Add the remaining onions, fresh tomatoes, tomato puree, and chicken stock. Stir and bring to the boil.

  • Reduce to a simmer and cook for 15 minutes, stirring occasionally.

  • Stir in garam masala during the final couple of minutes.

  • Serve garnished with coriander.

Fridge: Allow the curry to cool completely, then store in an airtight container in the fridge for up to 3 days.

Freezer: This curry freezes well. Store in a sealed container for up to 3 months. Defrost overnight in the fridge before reheating.

Reheating: Reheat thoroughly in a saucepan or microwave until piping hot throughout. Add a splash of water if the curry has thickened too much.
