A really luxurious tasting treat, ideal served after dinner with a hot drink!

(easily doubled or scaled to suit your needs)

Ingredients
8 Medjool dates, pitted
Almond butter – approx. 1 tsp per date
Dark chocolate – 50–70g, melted
Method
Carefully slice each date lengthwise and remove the pit.
Stuff each date with 1 teaspoon of almond butter. Press gently to close.
Chill the stuffed dates in the fridge or freezer for 10–15 minutes to firm up.
Meanwhile, melt dark chocolate in a heatproof bowl over simmering water or in short bursts in the microwave.
Dip each date halfway into the melted chocolate and place on a parchment-lined tray.
Chill again until the chocolate sets (about 15–20 minutes).
Serve chilled or at room temperature!
Store in an airtight container in the fridge for up to 1 week.
Can also be frozen for longer storage (up to 1 month). Let thaw slightly before serving.
