These crackers are so easy to make and great as a snack with or without a dip!
Prep: 5 minutes (+ 15–20 min resting)
Cook: 35–40 minutes

Ingredients
150g mixed seeds, incorporating at least 35g flaxseed or chia
120ml (=120g) water
½ tsp smoked paprika
¼ tsp ground ginger
¼ tsp ground cumin
Pinch of cinnamon
Pinch of cayenne or chilli flakes
Method
Mix seeds, water and spices in a bowl.
Let sit for 15–20 minutes so the flax/chia can gel.
Preheat oven to 160°C fan / 180°C / Gas Mark 4.
Spread the mixture thinly and evenly on a baking tray lined with baking paper.
Bake for 35–40 minutes, checking after 25 mins.
If the edges are crisp first, break them off and return the rest to the oven.
Cool fully, then break into crackers.
Store in an airtight container for up to 1 week.
To re-crisp, pop them in a warm oven at 180°C for 5–8 minutes.
