Tomato & Cheese Oat & Seed Bread

An easy loaf to make at home, with no breadmaker required. The addition of cheese and tomato means that this is a great portable lunch, no need to make a sandwich!

Ingredients

  • 250g plain wholemeal flour

  • 100g oats

  • 2 tsp baking powder

  • 1 tsp bicarbonate of soda

  • ½ tsp salt

  • 250ml natural or Greek yoghurt

  • 2 tbsp olive oil

  • 4 tbsp tomato purée (or 50g chopped sun-dried tomatoes)

  • 75g grated cheese (cheddar or similar)

  • 50g mixed seeds (sunflower, pumpkin, sesame, flax)

Method

  • Preheat oven to 200°C (fan 180°C / gas 6). Line a loaf tin.

    • Mix the flour, oats, baking powder, bicarbonate of soda, and salt in a large bowl.

    • Stir in the yoghurt, olive oil, and tomato purée until just combined.

    • Fold in the cheese and seeds.

    • Spoon the mixture into the tin and smooth the top.

    • Bake for 35–40 minutes, until golden and a skewer inserted into the middle comes out clean.

    Store

    Room temperature: 2–3 days in an airtight container

    Freezer: Slice and freeze for up to 1 month
