Ingredients
Salad
1 x 400g tin chickpeas, drained and rinsed (reserve a few for garnish if desired)
1 clove garlic, peeled
Juice of 1 lemon
4 tbsp tahini
3 tbsp cold water (add more for a thinner texture)
1 tbsp olive oil
1–1½ tbsp smoked paprika (or 3 tbsp if you prefer a bold, smoky flavour)
Method
Add the chickpeas, garlic, lemon juice, tahini, water, olive oil, and smoked paprika to a food processor or high-powered blender.
Process for 1–2 minutes, pausing to scrape down the sides. Add an extra spoonful of water or olive oil, if needed, for a creamier consistency.
Adjust to taste, adding more lemon or paprika if needed.
Spoon into a bowl, drizzle with olive oil, and sprinkle with a little extra paprika.
