Ingredients
Ingredients:
1 tbsp olive oil
1 onion, chopped
2 garlic cloves, crushed
1 tsp ground cumin
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
500g parsnips, peeled and chopped
2 large eating apples (e.g. Braeburn), peeled and chopped
For the 'stock' (you can use 1L stock in its place):
1L hot water
1/2 tsp salt
1/2 tsp garlic powder
1/2 tsp onion powder
A pinch of dried herbs (thyme, rosemary, or mixed herbs)
Method
Heat oil in a pan and gently sauté the onion for 5 mins until soft.
Add garlic and spices, cook for 1 min until fragrant.
Stir in parsnips and apple. Cook for 2–3 mins.
Mix the homemade stock substitute in a jug, then pour 3/4 into the pan.
Bring to the boil, reduce heat, and simmer for 20 mins until soft.
Blend until smooth. Adjust consistency with the reaming 'stock' if needed.
