Parsnip and Apple Soup

Ingredients

  • Ingredients:

    • 1 tbsp olive oil

    • 1 onion, chopped

    • 2 garlic cloves, crushed

    • 1 tsp ground cumin

    • 1/2 tsp ground cinnamon

    • 1/4 tsp ground nutmeg

    • 500g parsnips, peeled and chopped

    • 2 large eating apples (e.g. Braeburn), peeled and chopped

      For the 'stock' (you can use 1L stock in its place):

    • 1L hot water

    • 1/2 tsp salt

    • 1/2 tsp garlic powder

    • 1/2 tsp onion powder

    • A pinch of dried herbs (thyme, rosemary, or mixed herbs)

Method

  1. Heat oil in a pan and gently sauté the onion for 5 mins until soft.

  2. Add garlic and spices, cook for 1 min until fragrant.

  3. Stir in parsnips and apple. Cook for 2–3 mins.

  4. Mix the homemade stock substitute in a jug, then pour 3/4 into the pan.

  5. Bring to the boil, reduce heat, and simmer for 20 mins until soft.

  6. Blend until smooth. Adjust consistency with the reaming 'stock' if needed.
