Soft, gently spiced mini sponges made with yoghurt and honey, just right for a wintry moment with a cuppa.
Prep: 15 min + 20 min chill

Ingredients
200g plain wholemeal flour
3 tsp ground ginger
1 tsp cinnamon
½ tsp mixed spice
½ tsp bicarbonate of soda
Pinch of salt
75g full-fat natural or Greek yoghurt
100g honey
1 egg
Method
Preheat oven to 180°C (fan 160°C). Line a baking tray.
Mix the flour, spices, bicarb, and salt in a large bowl.
In a separate bowl, whisk the yoghurt, honey, and egg yolk.
Combine wet and dry to form a sticky dough.
Chill for 20 mins if time allows, it makes shaping easier.
Roll out on a floured surface to ½ cm thick, cut into stars or snowflakes or whatever shape you have!
Bake for 10–12 mins until just golden. Cool fully on a wire rack, they firm up as they cool.
Storage:
Airtight tin: 3–4 days
Freezer: Up to 1 month
