Ginger Spongey Snowflakes

Soft, gently spiced mini sponges made with yoghurt and honey, just right for a wintry moment with a cuppa.

Makes: approx. 20 snowflakes

Allergen info: gluten (flour), eggs, dairy (yoghurt), honey

Ingredients

  • 200g plain wholemeal flour

  • 3 tsp ground ginger

  • 1 tsp cinnamon

  • ½ tsp mixed spice

  • ½ tsp bicarbonate of soda

  • Pinch of salt

  • 75g full-fat natural or Greek yoghurt

  • 100g honey

  • 1 egg

Method

  • Preheat oven to 180°C (fan 160°C). Line a baking tray.

  • Mix the flour, spices, bicarb, and salt in a large bowl.

  • In a separate bowl, whisk the yoghurt, honey, and egg yolk.

  • Combine wet and dry to form a sticky dough.

  • Chill for 20 mins if time allows, it makes shaping easier.

  • Roll out on a floured surface to ½ cm thick, cut into stars or snowflakes or whatever shape you have!

  • Bake for 10–12 mins until just golden. Cool fully on a wire rack, they firm up as they cool.

    Storage:

    • Airtight tin: 3–4 days

    • Freezer: Up to 1 month
