Baked Sea Bass with Capers, Olives, Lemon & Dill

One of my favourite week night dinners, so quick and easy! A light and flavourful dish with Mediterranean-inspired ingredients, perfect for a quick and healthy meal.

Ingredients

  • 2 sea bass fillets (skin on)

  • 1 tbsp capers, rinsed

  • 10 black or green olives, sliced

  • 1 lemon, thinly sliced

  • 1 tbsp fresh dill, chopped (or 1 tsp dried dill)

  • 1 tbsp olive oil

  • 1 garlic clove, finely chopped

Method

  • Preheat the oven to 200°C / 180°C fan / 400°F.

  • Prepare a baking dish and lightly grease it with olive oil.

  • Place the sea bass fillets skin-side down in the dish.

  • Scatter the capers, olives, and garlic over the fillets.

  • Layer the lemon slices on top and sprinkle with dill.

  • Drizzle with olive oil

  • Bake in the oven for 10 minutes or until the fish is opaque and flakes easily with a fork.

  • Serve immediately with steamed vegetables, new potatoes, or a fresh salad.
