A pretty, layered twist on overnight oats that feels like pudding but is packed with nourishing goodness. A fun and satisfying breakfast or snack for kids and adults alike!

Ingredients
For the oat mixture:
100g oats
200ml milk (dairy or plant-based)
150g Greek or natural yoghurt
2 Medjool dates
3 tbsp ground almonds
1 tsp vanilla extract
For layering and topping:
100g extra Greek or natural yoghurt
6 tsp ground almonds
6–8 frozen cherries, defrosted, with a little juice
1 tbsp flaked almonds (to serve)
Method
In a blender, combine the milk, yoghurt, dates, ground almonds, and vanilla until smooth. (If you don’t have a blender, mix well by hand, mashing the dates as finely as possible.)
Pour the mixture over the oats, stir well, cover, and refrigerate overnight.
To assemble, sprinkle 2 tsp ground almonds into the bottom of each serving glass.
Add 2–3 dessert spoons of the oat mixture, then a spoonful of yoghurt.
Repeat with another layer of oat mixture and yoghurt.
Finish with a cherry and a little drizzle of cherry juice.
Scatter flaked almonds on top just before serving.
Fridge: Keeps 2–3 days, either pre-layered or with the oat mixture stored plain.
