Chocolate Chip Oaty Cookies

Soft, satisfying cookies with a gentle hint of chocolate. No peanut butter or banana. Ideal for lunchboxes or a mindful, nourishing treat.

Ingredients

  • 120g oats (rolled or porridge oats)

  • 1 egg

  • 2 tbsp Greek yoghurt (or plain natural yoghurt)

  • 2 tbsp honey or maple syrup

  • 1 tsp vanilla extract

  • ½ tsp cinnamon (optional)

  • 2 tbsp flour (wholemeal or plain – helps bind)

  • Pinch of salt

  • 50g dark chocolate chips (or chopped dark chocolate)

Method

  • Preheat oven to 180°C (fan 160°C) and line a baking tray with parchment paper.

  • In a mixing bowl, whisk together the egg, yoghurt, honey or syrup, vanilla, salt, and cinnamon.

  • Stir in the oats and flour, then fold through the chocolate chips.

  • Let the mixture rest for 5–10 minutes to thicken slightly.

  • Spoon onto tray in cookie shapes and flatten slightly.

  • Bake for 10–12 minutes until golden at the edges and set.

  • Cool completely before storing or serving.

    Fridge: Store in an airtight container for 4–5 days

    Freezer: Freeze for up to 1 month
