Ingredients
120g oats (rolled or porridge oats)
1 egg
2 tbsp Greek yoghurt (or plain natural yoghurt)
2 tbsp honey or maple syrup
1 tsp vanilla extract
½ tsp cinnamon (optional)
2 tbsp flour (wholemeal or plain – helps bind)
Pinch of salt
50g dark chocolate chips (or chopped dark chocolate)
Method
Preheat oven to 180°C (fan 160°C) and line a baking tray with parchment paper.
In a mixing bowl, whisk together the egg, yoghurt, honey or syrup, vanilla, salt, and cinnamon.
Stir in the oats and flour, then fold through the chocolate chips.
Let the mixture rest for 5–10 minutes to thicken slightly.
Spoon onto tray in cookie shapes and flatten slightly.
Bake for 10–12 minutes until golden at the edges and set.
Cool completely before storing or serving.
Fridge: Store in an airtight container for 4–5 days
Freezer: Freeze for up to 1 month
