This light salad is wonderfully refreshing, with juicy orange and a touch of honey balanced by salty olives and crunchy seeds. Great as a side or a light lunch you can easily add to.

Ingredients
Salad
1 orange, peeled and cut into bite-sized pieces
1 large tomato, chopped into bite-sized chunks
Approx. 3 inches of cucumber, sliced or chopped
1 tbsp sliced black olives
1 tbsp pumpkin seeds
A handful of fresh rocket
Dressing
1 tsp honey
1 tsp apple cider vinegar
1 tsp olive oil
Method
Combine the orange, tomato, cucumber, olives, pumpkin seeds, and rocket in a large bowl.
In a small bowl or jar, whisk together the honey, apple cider vinegar, and olive oil.
Drizzle the dressing over the salad and toss gently to coat.
Serve fresh.
