A silky-smooth chocolate mousse that feels like a treat but is made with wholesome ingredients. Sweetened naturally with dates and boosted with protein-rich tofu. Perfect for when you want something indulgent without the heaviness. Great for dinner parties!

Allergen info: Soy (tofu), Dairy (yoghurt - can be swapped for dairy free yogurt or left out)
Ingredients
8 Medjool dates
3 tbsp hot water (for soaking, keep for blending)
2 tbsp Greek yoghurt
300g silken tofu
5 tbsp cocoa powder
2 tsp vanilla essence
Method
Soak the dates in hot water for 15 minutes to soften. Drain, keeping 3 tbsp of the soaking water.
Place the dates, reserved water, Greek yoghurt, silken tofu, cocoa powder, and vanilla essence into a blender.
Blend until completely smooth and creamy.
Spoon into small bowls or glasses and chill in the fridge for at least 1 hour before serving.
Fridge: Up to 3 days, covered.
Freezer: Not suitable for freezing (texture changes).
