A light and delicious breakfast, great served with berries and yoghurt

Ingredients
4 eggs
7 oz. (200g) cottage cheese
4 tbsp. milk
2 tbsp. honey
1 tsp. vanilla extract
5.3 oz. (150g) all-purpose wholegrain flour
1 tsp. baking powder
½ tsp. ground cinnamon
2 tbsp. olive oil + 1 tbsp. for cooking
toppings of your choice
Method
In a large bowl, whisk together the eggs, cottage cheese, milk, honey and vanilla extract. Sift in flour, baking powder and cinnamon. Whisk until the flour is incorporated.
Now whisk in 2 tablespoons of the olive oil, and set the batter aside to rest for 10 minutes.
When ready to cook, lightly grease a large pan with olive oil (or use a non stick pan) and place over a medium heat. When the pan is hot, add the batter to the pan, roughly ¼ cup per pancake. Cook the pancakes for 2-3 minutes on each side.
Serve the pancakes warm, with a topping of your choice.
