These Choc-Banana Tray Bake squares are perfect for using up ripe bananas; they’re lightly sweetened with honey and made even more delicious with chunks of dark chocolate. Great for afternoon snacks, or a healthier treat with a cuppa.

Ingredients
3 ripe bananas, mashed
1 egg
2 tbsp cocoa powder
2 tbsp honey
2 tbsp peanut butter
100g wholemeal plain flour
1 tsp baking powder
2 tbsp milk
2 tbsp flaxseed
Handful dark choc chunks
Pinch nutmeg and salt
Method
Preheat oven to 180°C (160°C fan). Line a small baking tin.
Mix wet ingredients: banana, egg, peanut butter, honey and milk.
Stir in cocoa, flour, baking powder, flaxseed, nutmeg, and salt.
Fold in choc chunks.
Bake for 20–25 mins or until a skewer comes out mostly clean.
Cool, slice into squares.
Store in an airtight container for up to 2 days. Keep in a cool, dry spot away from direct sunlight.
Fridge:
If you'd like them to last longer, store them in an airtight container in the fridge for up to 5 days. The texture may firm up slightly when chilled, but they’ll still taste great.
Freezer:
These tray bake squares freeze really well! Place them in a single layer in a container or freeze individually wrapped pieces.
Freeze for up to 3 months.
To serve, defrost at room temperature for a couple of hours or warm gently in the microwave.
