Chewy, nourishing bars made with oats, fruit, and nut butter – ideal for healthy snacking.

Serves: 12-14 bars
Allergen info: Oats (gluten), peanuts (or other nuts/seeds).
Ingredients
200g oats
150g dates (soft) or raisins
100g peanut butter
3 tbsp honey
50g chopped nuts or seeds
2 tbsp water (to bind)
Method
Blend dates/raisins to a paste (add 2 tbsp water if needed).
Warm the peanut butter and honey gently in a pan over low heat until smooth and runny.
Stir in oats, nuts/seeds, and the fruit paste. Mix well until sticky. (You can use a blender for this or your hands)
(add a little more water if needed)
Press into a lined 20x20cm tin (1.5–2cm thick), smoothing the top firmly.
Chill in the fridge for 1 hr or the freezer for 20 minutes until set.
Slice into bars with a sharp knife.
Fridge: Up to 5 days in an airtight container.
Freezer: Up to 1 month. Defrost 5–10 mins before eating.
