This super-quick, filling wrap is full of flavour and can be adapted to whatever you have in the fridge. Great for lunch when you want something tasty and super quick.

Allergen info: Eggs, Gluten (bread or falafels),Yeast (if using nutritional yeast or bread)
Ingredients
2 falafels, broken into chunks (or swap in a slice of sourdough or Fitfish bread)
A handful of salad leaves (any kind – spinach, rocket, mixed greens)
2 eggs, whisked
A drizzle of olive oil
Black pepper
Optional toppings: cherry tomatoes, seeds, nutritional yeast, any fresh herbs you have (parsley, basil, coriander – all work beautifully)
Method
Heat a small non-stick pan with a tiny drizzle of olive oil.
Add the broken-up falafel and a little black pepper. Toast gently until golden.
Remove about half the falafel and set aside.
Toss in your salad leaves and stir for a minute until just wilted.
Turn off the heat, then pour in the whisked eggs. The residual heat will gently cook them – give it a few swirls so they start to set.
Add your toppings: the rest of the falafel, some seeds, nutritional yeast, chopped tomatoes, and any fresh herbs you have.
When cooked, slide onto a plate and serve folded like a wrap.
