Fish & Prawn Curry with Creamed Coconut & Spinach

A creamy, gently spiced curry made with frozen fish and prawns—no defrosting, no fuss.

Ingredients

  • 400–450g frozen firm white fish fillets (cod, haddock, or pollock) — no need to defrost

  • 200g frozen raw prawns (peeled)

  • 1 tin chopped tomatoes

  • 1 onion, finely chopped (or frozen chopped onion)

  • 2 garlic cloves, crushed (or 1 tsp garlic purée)

  • 2cm fresh ginger, grated (or ½ tsp ground ginger)

  • 1 tbsp olive oil

  • 2 tsp curry powder (mild, medium, or hot to taste)

  • 1 tsp ground cumin

  • ½ tsp turmeric

  • 30–35g creamed coconut block, chopped or grated

  • A handful or two of fresh or frozen spinach

  • Juice of ½ lemon

  • Fresh coriander, to garnish

Method

  • Heat olive oil in a wide pan over medium heat. Add the onion and cook until soft and golden.

  • Stir in garlic, ginger, curry powder, cumin, and turmeric. Cook for 1–2 minutes until fragrant.

  • Pour in the chopped tomatoes and simmer for 5 minutes.

  • Add the frozen fish fillets and frozen prawns. Let them begin to defrost in the sauce, then cut the fish into chunks directly in the pan using kitchen scissors.

  • Cover and simmer gently for 15–18 minutes, stirring once or twice, until the fish flakes easily and prawns are pink and cooked through.

  • Stir in the creamed coconut and simmer for 2 more minutes.

  • Add the spinach right at the end, stirring until wilted.

  • Squeeze in lemon juice, season, and garnish with coriander.

Serve with:

  • Vegetables and brown rice, quinoa, or warm wholemeal flatbreads

    Storage:

    • Fridge: Up to 2 days (reheat gently)

    • Freezer: Freeze sauce only. Add fish and prawns fresh when cooking
