This wholesome pizza features a wholemeal yeasted base, fresh veggies, and eggs for a delicious, satisfying meal you can feel great about!

Makes: 1 large or 2 small pizzas

Ingredients
For the dough:
300g wholemeal bread flour
1 tsp salt
1 tsp dried yeast
200ml warm water
1 tbsp olive oil
For the topping:
2–3 tbsp passata
A handful of sliced black olives
A handful of sliced mushrooms
A few strips of red pepper
2 eggs
Optional: pinch of dried oregano or basil
Method
Make the dough: In a mixing bowl, combine the flour, salt, and yeast. Add the warm water and olive oil. Stir until a dough forms.
Knead for 5–10 minutes until smooth and elastic
Cover and leave in a warm place to rise for about 1 hour or until doubled in size.
Preheat oven to 200°C (fan) / 220°C (conventional) / 425°F / Gas mark 7.
Shape the dough:
Once risen, roll the dough out into a thin base. Transfer to a lined baking tray or pizza tray. Stretch a little extra if necessary.
Add toppings:
Spread passata over the dough, leaving a small border. Sprinkle with herbs if using. Add the olives, mushrooms, and red pepper.
Crack the eggs directly onto the pizza, spacing them out or placing them centrally.
Bake for 12–15 minutes, until the base is crisp and golden and the egg whites are set.
Cool slightly, slice, and enjoy!
Best enjoyed fresh, but leftovers can be stored in the fridge for up to 2 days. Reheat in the oven for the best texture.
