Prep: 10 min
Cook: 20 mins
Level: Beginner
Makes: approx. 32 bites
Allergen info: nuts and milk
Ingredients
1 can (400g) chickpeas, drained and rinsed
1 tbsp milk (of choosing)
4 tbsp cocoa powder
80g smooth peanut butter (or almond butter)
100g honey (roughly 75 ml)
1 tsp vanilla extract
½ tsp baking powder
1 tsp ground cinnamon
Pinch of salt
100g dark chocolate (70% cocoa or higher), roughly chopped
Method
Preheat the oven to 180°C (160°C fan) / 350°F. Line a baking tray with parchment paper.
Blend the chickpeas and milk in a food processor until smooth, scraping down the sides as needed.
Mix all the other ingredients, apart from the chocolate, in the food processor. Blend until well combined.
Fold the chocolate chunks into the dough using a spatula.
Form large rough shapes by scooping tablespoon-sized portions of dough onto the prepared baking tray. Flatten slightly with the back of a spoon.
Bake for 15-20 minutes.
Let the shapes cool on the tray for a few minutes before transferring them to a wire rack.
Once cooled, cut into bite-sized shapes.
Store these in an airtight container for up to 2 days, in the fridge for up to 5 days, or freeze for up to 3 months.
