A smoky, savoury, plant-based topping that adds rich flavour and texture to any salad bowl.

Ingredients
250g chestnut mushrooms, crumbled by hand
1 tsp ground cumin
1 tsp smoked paprika
1 tsp fresh coriander, chopped (plus 1 tsp more for garnish)
A splash of water (for cooking)
Method
Crumble the mushrooms by hand.
Heat a non-stick frying pan over medium heat.
Add the mushrooms, cumin, smoked paprika, and 1 tsp chopped coriander.
Add a splash of water to prevent sticking and stir-fry for about 8–10 minutes, or until the mushrooms are browned and slightly crispy in parts. Add more water if needed to prevent drying out.
Remove from heat and serve warm on top of your favourite salad mix.
Garnish with the remaining fresh coriander just before serving.
