Made with frozen veggies this is a quick to throw together, minimal effort, nourishing light meal. Ideal for when you just need to get back on track with healthy eating without the fuss.

Ingredients
250g frozen mixed vegetables (e.g., peas, carrots, corn, green beans, etc.)
200g frozen spinach (or other leafy greens like kale)
1 small onion, chopped (or frozen diced onion)
2 cloves garlic, crushed (frozen or fresh
750ml vegetable stock (or chicken stock if you prefer)
1 tbsp olive oil
1 tsp dried herbs (e.g., thyme, oregano, or mixed herbs)
A tin of beans such as pinto, butter or cannellini
Optional: a splash of lemon juice for added freshness
Method
Heat the olive oil in a large pot over medium heat.
Add the chopped onion and garlic and sauté for 3-4 minutes until softened.
Add the frozen mixed vegetables and frozen spinach (or other greens) directly into the pot. Stir for a couple of minutes, breaking up any large pieces of vegetables.
Pour in the vegetable stock, bring to a boil, then reduce to a simmer. Let it cook for 10-15 minutes until the vegetables are tender.
Add the dried herbs to taste.
Blend the soup until smooth, or leave it chunky for more texture.
Stir in a tin of beans at the end to help to fill you up.
Optionally, add a splash of lemon juice to brighten the flavour and give it a fresh kick
Serve hot and enjoy! You can also add a drizzle of olive oil or a dollop of Greek yoghurt for creaminess if you have them on hand.
