Ingredients

  • 250g frozen mixed vegetables (e.g., peas, carrots, corn, green beans, etc.)

  • 200g frozen spinach (or other leafy greens like kale)

  • 1 small onion, chopped (or frozen diced onion)

  • 2 cloves garlic, crushed (frozen or fresh

  • 750ml vegetable stock (or chicken stock if you prefer)

  • 1 tbsp olive oil

  • 1 tsp dried herbs (e.g., thyme, oregano, or mixed herbs)

  • Optional: a splash of lemon juice for added freshness

Method

  • Heat the olive oil in a large pot over medium heat.

  • Add the chopped onion and garlic and sauté for 3-4 minutes until softened.

  • Add the frozen mixed vegetables and frozen spinach (or other greens) directly into the pot. Stir for a couple of minutes, breaking up any large pieces of vegetables.

  • Add the dried herbs to taste.

  • Blend the soup until smooth, or leave it chunky for more texture.

  • Stir in a tin of beans at the end to help to fill you up.

  • Optionally, add a splash of lemon juice to brighten the flavour and give it a fresh kick

  • Serve hot and enjoy! You can also add a drizzle of olive oil or a dollop of Greek yoghurt for creaminess if you have them on hand.
