Nut-Free Snack Balls!

Recently I visited my son's school to give an assembly on healthy eating (assisted by 18 cuddly fruit and vegetables!) I also made 200 snack balls with the children!

I thought I would share the recipe for the snack balls with you, as they went down so well! I'm pretty chuffed with myself for creating a nut-free base that works!

These balls are perfect for kids and grown-ups - and with just a few tweaks, you can make 4 different flavours.

Great for lunchboxes, quick pick-me-ups, or something sweet after dinner that won’t derail your day.

The Base Recipe (makes 15 balls)

100g rolled oats

80g soft pitted medjool dates, chopped

1 tbsp honey

1 tbsp desiccated coconut

Then add these flavour ideas (for each batch):

Mint Choc – 1 tsp mint extract + 2 tbsp cocoa powder

Chocolate Orange – ½ tsp orange extract + 1 tbsp cocoa powder

Gingerbread – 2 tsp ground ginger + 1 tsp cinnamon + 1/2 tsp mixed spice

Apple Pie – 25g chopped dried apple + 1 tsp cinnamon + ¼ tsp mixed spice

Mix everything in a bowl (or food processor) until sticky and roll into balls. If it’s a bit dry, add a splash of water. Pop in the fridge for 1 hour to set, or 10 minutes in the freezer if you're in a rush!
