These easy pancakes are a filling winner for special occasions or a regular feature in your week! They make an ideal weekend breakfast with yogurt and berries.

Ingredients
2 eggs
3 tbsp (approx 50g) oats
Method
Blend the oats and eggs until the oats are finely ground.
If the mixture isn’t runny enough, add a dash of milk and blend again.
Heat a non-stick frying pan until very hot.
Tip in ¼ of the mixture and cook for approximately 30 seconds, or until you can turn the pancake easily.
Cook on the other side for another 30 seconds.
Remove the pancake and repeat with the remaining mixture.
Serve with toppings of your choice.
