Easy Oaty Pancakes

These easy pancakes are a filling winner for special occasions or a regular feature in your week! They make an ideal weekend breakfast with yogurt and berries.

Makes: approx 4 pancakes

Allergen info: eggs, oats

Ingredients

  • 2 eggs
  • 3 tbsp (approx 50g) oats


Method

  • Blend the oats and eggs until the oats are finely ground.
  • If the mixture isn’t runny enough, add a dash of milk and blend again.
  • Heat a non-stick frying pan until very hot.
  • Tip in ¼ of the mixture and cook for approximately 30 seconds, or until you can turn the pancake easily.
  • Cook on the other side for another 30 seconds.
  • Remove the pancake and repeat with the remaining mixture.
  • Serve with toppings of your choice.
